Today I thought I’d make some muffins for my husband to take to work for his breakfast this week. I had some cottage cheese that I needed to use, so I went online and found a recipe for cottage cheese muffins that didn’t sound completely terrible.

Here’s a recipe I developed for a really tasty meatloaf which my family loves…. this recipe can be used as a guide for any meatloaf and veggie ingredients can be substituted or changed per your preferences — that’s why I named it like I did – you can change ingredients to your family favorites!
