Tasty Fried Tuna Cakes

Canned tuna can be used to make some really yummy tuna cakes, very similar to salmon cakes. I generally fry tuna cakes but you could try baking them. My husband loves these!

INGREDIENTS

1/2 tsp dill
1/2 cup yellow onion, finely diced
1/4 cup frozen spinach, defrosted and all water squeezed out
2 eggs
2 cans tuna, drained
2/3 cup bread crumbs, finely crushed
1 tbsp grated Parmesan cheese

INSTRUCTIONS

1. place all items in large bowl and mix together
2. form into large patties (should make 4)
3. fry in oil on med/high heat – don’t try to flip until you see a brown edge around the bottom of the cake and the patty slides around the pan easily
4. place on paper towel to drain before serving

  1. I am missing some of the ingredients…I am a diabetic. I was told by someone to mix the tuna with eggs and fry it. I am going to try that.
