My husband loves perogies and I’ve found that they are a quick and tasty side dish or snack, plus they are somewhat lowfat. They come in a variety of flavor combinations which are all pretty good (pizza flavor would be an exception…not good). I thought they might taste good in a casserole and luckily the back of the package had a recipe – which turns out to be pretty good!
The recipe below is from the Cheemo brand of perogy – Cheemo Perfect Perogy Casserole
Makes 4-6 servings
– 16 – 20 CHEEMO Perogies
– 1 Onion, chopped
– 1/4 cup Milk
– 1 tbsp. Butter or Margarine
– 1/2 cup Cooked Ham, diced
– 1 Green Pepper, diced
– 1/4 cup Cheddar Cheese, shredded
– 10 oz. can Condensed Mushroom Soup
In a small skillet melt butter or margarine and sauté onion and green pepper for 5 minutes. In a medium size casserole dish, combine frozen CHEEMO perogies, onion, green pepper, and ham. Combine milk and mushroom soup and pour over casserole. Top with cheddar cheese.
Bake 35 minutes at 175ºC (350ºF), or microwave until heated through.
I’ve made it using the exact recipe as directed and it was good. I’ve also used 2 tablespoons of Cheese-Whiz instead of cheddar cheese, and used left-over and crumbled breakfast sausage instead of the ham and both changes resulted in equally yummy casseroles. In fact, I think I like the cheese-whiz better than the cheddar as it was much creamier.
