Wow, these were really good – and a super easy way to use up extra veggies.
INGREDIENTS
1 medium large red potato, washed
zucchini of equal size as potato, washed
1/4 large white onion
2 eggs
1 large handful of flour
1 large handful of flavored croutons, ground into crumbs
