I felt like having meatballs and manicotti for supper tonight so I whipped up the following recipe. My husband LOVED these and said they were very subtle yet yummy-not overpowering or too spicy.



  • Oil for frying (just enough to coat bottom of pan) meatballs
  • 1 cup finely crushed bread crumbs (I used an old french bread to make crumbs)
  • 1 large egg
  • 1 tbsp Italian Seasoning
  • 1 tbsp grated Parmesan
  • 1 lb lean hamburger
  • 2 clove garlic, crushed
  • 1/4 cup onion, minced
  • 1/4 box frozen spinach, defrosted and water squeezed out
  • 1 can of 14oz diced tomatoes


  1. Combine all ingredients well, except tomatoes, in a large bowl and let sit 30 minutes to allow flavors to meld together
  2. Form meat mixture into balls, about the size of large marbles
  3. On medium low heat, fry meatballs on all sides in oiled pan
  4. When meatballs are cooked on all sides, top with diced tomatoes and cover pan and allow to simmer on lowest heat for 20-30 min

I paired these meatballs with some yummy vegetable and cheese stuffed manicotti in red sauce. These meatballs are a quick meal idea that can easily be frozen or paired with spaghetti and red sauce. To freeze, place meatballs on cookie sheet and cover with plastic wrap then place in freezer for 1-2 hours. Once frozen, place meatballs in a freezer bag or vacuum sealed bag.
