This recipe was listed on The Cottage Cheese Page website…apparently it was originally found in the book “Breaking the Vicious Cycle” by Elaine Gottschall (as noted by the poster on the referenced website).

The only changes I made to the original recipe were to use lemon yogurt and no lemon zest….by using lemon yogurt I was able to make this a 5 ingredient recipe!

The original recipe is shown below.

2 cups dry curd pressed cottage cheese (fat percentage optional)
3 eggs
1/2 cup yogurt (any percentage of fat)
1/3 cup honey
1 tsp. grated lemon peel
1-2 tsp. vanilla

Preheat oven to 350. Combine ingredients and process until satin smooth. Pour into loaf pan and bake 30 minutes or until edges are slightly browned. Cool and refrigerate for several hours. Top with fresh or cooked drained berries or fruit of choice. Serves 8. 148 calories per serving. 12.65 g of protein, 20.5 g of carbs, 2.5 g of fat. This recipe is called a cheesecake, but the directions say to make it in a loaf pan…you could probably make it in a small casserole dish.

I made this recipe once before in a springform pan and a lot of liquid drained out while in the oven and it deflated….so I would not recommend a springform pan for this recipe. Also, I had to let this cook a little longer than the 30 minutes noted in the recipe….about 45 minutes which may be due to altitude or something.

Overall, this was really easy to make and the flavor was pretty good. After it sits in the fridge overnight any liquid is absorbed into the cake loaf.
