I LOVE easy, tasty, and healthy foods…. and this salad is definitely among the best! Did I mention I LOVE Greek food?!?  Seriously, this is a wonderful salad to add to your meal as an alternative to the hum-drum, same old salad you might usually eat. It’s awesome as a side with grilled shrimp, for example.

This recipe is great (from the Greek Home Recipes website) …. you can pretty much just throw the ingredients together without too much fuss and worry about proportions….you can leave out the red wine vinegar if you don’t have it but it’s a nice feature.

Ingredients:

4 ounces feta cheese
1 cucumber
1 red/green bell pepper
5 tomatoes
1 head romaine lettuce
Black Olives – handful
1 large red onion, peeled and thinly sliced
1 tsp dried oregano
Salt
Freshly ground black pepper
Red wine vinegar
Olive oil

Preparation:

Assemble feta cheese and vegetables in a large bowl. Sprinkle with the oregano, salt and pepper. Drizzle with olive oil and vinegar and serve.
