I have never really been able to figure out how to make a tasty Mexican dish but tonight I think my chicken enchiladas turned out pretty good! I will definitely make them again….they aren’t as good as the real thing but it’s a good alternative.


  • 2 large pieces skinless/boneless chicken breasts, boiled and torn into shreds
  • 1/4 cup chopped red onion
  • 1/2 chopped green pepper
  • 2 cloves garlic, crushed
  • 1/2 cup medium picante style salsa
  • 4 large flour tortillas
  • spoonful of sliced, canned green chiles
  • prepared Salsa Verde
  • 1 cup cooked white or brown rice


  1. saute the onion, garlic, and pepper in a skillet – meanwhile, boil the chicken breasts and prepare the rice
  2. turn the heat down to medium low and add the chiles and picante salsa
  3. once your chicken is boiled, shred it into chunks and mix it into the skillet with the salsa mixture and cover with a lid and let simmer about 10 minutes
  4. once the rice is done, spoon 2 tablespoons of the chicken mixture and 1 tablespoon rice into the tortilla wraps and roll them up
  5. cover the rolls with the salsa verde and a small spoon of sour cream

This was pretty tasty but… it was pretty spicy too. If you don’t like spicy food, you might want to omit the chiles. These were very filling…my hubby ate 1 and I ate 3/4 and we were both stuffed!
