Okay, at first glance this cake combination sounds really icky… but I had all the ingredients in the fridge, I really wanted a chocolate cake, and it had some good reviews…so I thought I’d give it a try.

Result? It wasn’t bad… not the kind of texture I was expecting for a cake, kinda spongy, but the flavor wasn’t bad…. I topped it with 1/2 can chocolate icing….good with vanilla ice cream or a cold glass of milk.

Honesty, I doubt I’ll make this recipe again as it just wasn’t “cake” to me…

Anyway, the ingredients blended together very well and it rose very nicely in the oven. I did head the advice of others and baked it for more than 40 minutes (60 to be exact) and checked with cake tester/toothpick to ensure it was done.

Here’s the original recipe below (from southern food section of about.com):


  • 2 cups flour
  • 1/2 cup cocoa
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 3/4 cup mayonnaise
  • 1 cup water
  • 1 teaspoon vanilla


Sift together the flour, cocoa, soda and salt. Cream together the sugar, mayonnaise, water and vanilla. Add dry ingredients to the creamed mixture; stir until well blended. Pour batter into greased and floured layer cake pans (or a 9- x 13-inch pan). Bake at 350°F. for about 25 minutes.
