I have never been a major fan of the crockpot…not sure why…. I guess because I hate cleaning the darn thing. Anyway, I wanted to make a roast for supper but had to work today so I decided to make it in my crockpot…the result was YUM! I put this in the fridge overnight so it was easy to get ready in the morning before heading to work.


  • 5-7 lb round roast (w/ fat on one side is best)
  • 5 medium large red potatoes, chopped into big chunks
  • 4 medium carrots, peeled and chopped into big chunks
  • 3 sticks celery, chopped into big chunks
  • 1/2 cup red wine
  • 1/2 cup water
  • salt and pepper to taste


  1. Place the veggies in the crockpot and cover with the water
  2. Add the roast and salt & pepper it, then pour the wine over it
  3. Place the covered crockpot into the fridge until the next morning
  4. In the morning, put the pot in the heating element and set it to 8 hours – it will be ready when you get home from work!

NOTE: you will probably have lots of liquid left over in your crockpot but your roast will be super moist and you can use the broth to make a soup.
