I really like zucchini but it can sometimes be hard to find recipes for using the yummy squash! I found a recipe in community-based cookbook called “Mix It Up With Marca” put out by Marca College in Saskatchewan. I tried the recipe and it is really good. It is meant to be used as an appetizer or for finger foods at a dinner party.

Hot Zucchini Squares

INGREDIENTS

  • 3 cups zucchini, thinly sliced
  • 1/4 cup onion, minced
  • 2 tbsp parsley, chopped
  • 1/2 tsp oregano
  • 3/4 tsp salt
  • 1 clove garlic, minced
  • 1/2 cup parmesan cheese
  • 4 eggs, beaten
  • 1 cup flour
  • 1.5 tsp baking powder
  • 1/2 tsp seasoned salt
  • 1/8 tsp pepper
  • 1 tbsp butter, melted
  • 1/2 cup oil

INSTRUCTIONS

  1. mix zucchini, onion, parsley, salt, garlic, oregano, cheese in a bowl
  2. add beaten eggs and mix well
  3. in a separate bowl combine flour, baking powder, seasoned salt and pepper
  4. mix dry ingredients into zucchini mixture and add the butter and oil
  5. pour into 9×13 dish and bake at 350F for 25 minutes
  6. cut into squares and serve warm (freezes well)

NOTES: This was really tasty…but I think it was way too much oil and salt. I didn’t add the butter and I drained the oil off the top of the dish straight from the oven (the zucchini mix stayed snuggly in the pan when tipped on it’s side to drain) – so If I make this again, I’ll use less oil and omit the butter and regular salt.
