I bought a bag of yellow and red peppers that I really needed to use up quickly, so tonight I whipped up some stuffed peppers. This really isn’t a very hard thing to make…and it’s not all that time consuming…30 minutes to assemble and 30 minutes to bake….especially if you use left-over rice.

INGREDIENTS

  • 4 medium to large red and/or yellow bell peppers, stems cut out and seeds removed
  • 1/2 white onion, chopped
  • 1 large garlic clove, crushed
  • 1 celery stalk, chopped
  • 1 cup left-over cooked white rice
  • 2 tsp Worcestershire sauce
  • 1/2 can stewed tomatoes with juice
  • 1/2 pkg spicy or mild sausage

INSTRUCTIONS

  1. saute the onion, garlic, and celery
  2. add tomatoes and rice and let simmer about 5 minutes
  3. cook the sausage in separate skillet and drain, then add to vegetable mixture
  4. add Worcestershire sauce and mix well
  5. stuff mixture into peppers all the way to the top
  6. place peppers in small casserole dish filled with about 1 inch of water
  7. bake in preheated oven (375F) for about 30 minutes or until peppers are tender
