I made a chicken alfredo lasagna tonight – I just wanted something a little different – it wasn’t too bad… some adjustments might be in order though if I make it again.


  • 2 large chicken breasts, grilled and chopped
  • 9 cooked lasagna noodles
  • 1 jar sun-dried tomato alfredo sauce
  • 5 med-large white mushrooms, chopped
  • 1 stick celery, chopped
  • 1/2 large white onion, diced
  • 1 sweet red pepper, diced
  • 1 clove garlic, minced
  • 1 cup cottage cheese
  • 1-1/2 cup mozzarella, shredded
  • rosemary and basil to taste


  1. grill chicken and chop into small bits
  2. saute vegetables until tender
  3. put a bit of alfredo sauce on bottom of dish and layer of noodles on top
  4. spread half of cottage cheese on top and then sprinkle some mozza and rosemary and basil on it
  5. top with layer of noodles, then chicken, some alfredo sauce and sauteed vegetables and cottage cheese
  6. top with layer of noodles, then sauce, and then rest of mozza and sprinkle with basil and rosemary
