Today we went to a friend’s house for supper, and he requested we bring a dish – maybe some cornbread? I have never made cornbread from scratch but I thought I’d give it a try. We were having fish so I found a recipe online that I thought might go well with fish… cornbread with corn bits….it turned out pretty good… it was very moist and was a hit!

The recipe is shown below:


  • 1 1/2 cups cornmeal
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1 scant teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 can (approx. 15 ounces) cream-style corn
  • 3 eggs
  • 6 tablespoons butter, melted


Combine dry ingredients in a large mixing bowl. Whisk together the remaining ingredients. Combine mixtures, stirring until all ingredients are moistened. Spread in a greased and floured 9-inch baking pan. Bake at 375° for 35 to 40 minutes.
