My hubby does not generally like sweet potatoes but I do and we had some that needed cooking, so I found a recipe for mashed sweet potatoes that sounded pretty good. I was doubtful he would like them but I have to say, my hubby LOVED these – they are pretty mild in flavor but he pretty much ate the entire pot – there were no leftovers! This recipe is also pretty fast and easy so give a try!

Here’s the recipe and instructions:


3/4 pound (336 g) sweet potatoes (approximately 1 large)
1/4 cup (60 ml) milk
1 tablespoon (15 ml) butter
Salt and pepper to taste
1/4 teaspoon (1 ml) thyme
1 cup (250 ml) Cheddar cheese, grated


Peel and cut sweet potatoes into pieces. Boil in same way as regular potatoes.

Once cooked, strain and mash potatoes with milk and butter. Season and add half the cheese.

Transfer to a greased baking dish. Sprinkle remaining cheese and broil until cheese is golden brown.
