You know what, I’ve only ever eaten a slice or two of radish and didn’t really know what to think of them. I saw that a the store had bunches of them on sale and decided to give them a try….so here I am trying to figure out something to do with these radishes…. I looked and looked and the only recipes I can find are related to salads, but I did find a couple of recipes for a dip that I’m testing. It sounds easy enough and uses cream cheese – what doesn’t taste good with cream cheese right? I decided to do a combo recipe based on the 2 that I found –> here are the links: Recipe 1, Recipe 2.

INGREDIENTS

  • 1 package cream cheese, softened
  • about 5 med-lg radishes shredded and liquid squeezed out
  • 2-3 chives, finely chopped (green and white parts)
  • salt and pepper to taste

Directions

  1. Make sure to squeeze out liquid from shredded radishes and place in food processor
  2. add soft cream cheese and blend together until smooth
  3. put into a bowl and mix in finely chopped onions, salt and pepper
  4. cover bowl and chill at least 1 hour to let flavors develop
  5. Serve with tortilla chips, melba toast, or your favorite cracker

WOW – this was really easy and tastes really good! 🙂  Definitely a keeper.
