Yesterday I was in the mood for a cake so I found this recipe online and it seemed pretty easy and quick so I gave it a try -turned out really moist and yummy – more like a sweet bread than a cake though. Definitely NOT for those on a diet, except as a splurge…unless you experiment with exchanging the sugar/butter out for some alternative.
Here’s the recipe below:
INGREDIENTS
- 1 3/4 cups boiling water
- 1 cup uncooked oatmeal
- 1 cup packed brown sugar
- 1 cup sugar
- 1/2 cup butter or margarine, softened
- 3 eggs
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cocoa
- 1/4 teaspoon salt
- 1 (12 ounce) package chocolate chips, divided
- 3/4 cup walnuts, chopped
INSTRUCTIONS
- In a mixing bowl, pour water over oatmeal. Allow to stand for 10 minutes. Add sugars and butter, stirring until the butter melts. Add eggs, one at a time, mixing well after each addition.
- Sift flour, soda, cocoa, and salt together. Add to the batter. Mix well. Stir in half of the chocolate chips. Pour into a greased 9×13 baking pan.
- Sprinkle top of cake with walnuts and remaining chocolate chips. Bake at 350F for about 40 minutes.
I skipped adding any nuts, but added flax seeds instead which gave a nice “crunch” to the cake.
