Wow, these were really good – and a super easy way to use up extra veggies.

INGREDIENTS

  • 1 medium large red potato, washed
  • zucchini of equal size as potato, washed
  • 1/4 large white onion
  • 2 eggs
  • 1 large handful of flour
  • 1 large handful of flavored croutons, ground into crumbs

INSTRUCTIONS

  1. Finely grate potato, onion, and zucchini into a bowl
  2. place in a cheese cloth and squeeze out excess liquid (or use some method to remove liquid)
  3. heat a skillet with a thin coating of oil until hot (I heated to medium hot)
  4. add veggies back to bowl along with the egg, flour and crumbs and mix well
  5. drop spoonfuls of mixture into skillet and turn down heat to medium
  6. cover with lid and turn occasionally as the patties/cakes brown (turn down heat if needed) – let cook/steam for about 20 minutes total to ensure the veggies cook and patties brown
  7. serve warm with meat and other veggie – can top with sour cream if desired.
