Okay, I made some meatballs with red sauce and spaghetti the other night that were really, really good…so I’m gonna record the recipe below – if you try them and like them, let me know!

  • 2 lbs lean hamburger
  • 1/4 yellow onion, finely diced
  • 1 palm-full red pepper flakes
  • 2 eggs
  • 2 tbsp garlic plus seasoning
  • 1/4-1/2 cup breadcrumbs
  • 1 palm-full dried parsley flakes
  • 1/2 bag spinach
  • 1/2 red pepper, finely diced
  • red sauce
  • parmesan cheese
  • spaghetti

  1. for the sauce, start by heating spinach and peppers in a skillet and then simply add your favorite red sauce
  2. for the meatballs, combine eggs, bread crumbs, seasonings and pepper flakes, onion and hamburger in a large mixing bowl – then make balls from the mixture using a spoon or cookie spoon
  3. place the meatballs on a baking tray and bake 25 minutes at 400F
  4. cook the spaghetti, then plate up with sauce and meatballs
