This recipe is pretty tasty – it comes from the book Glycemic Load Diet Cookbook and is very simple and filling. I’ll just list the ingredients and summarize the cooking steps – the recipe can be found on pg 47 of the book.

INGREDIENTS

  • 1/4 apple
  • 2 tsp butter
  • 1/4 tsp Splenda or Sucanat
  • 2 eggs
  • 1 oz sharp cheddar cheese, shredded (abt 1/4 cup)
  • 2 slices bacon, cooked, drained, crumbled

INSTRUCTIONS

  1. core and quarter your apple and slice it up – then saute in butter with Splenda in skillet (I shredded mine instead and didn’t bother with sugar) then set aside (I dumped mine on a plate)
  2. cook your egg and as it cooks, add the apple on top (I just scrambled my egg and put it on top of the apple on my plate)
  3. Shred your cheese and fry up your bacon – then top your omelet with cheese and bacon slices
