Pear Pecan Oatmeal

Oatmeal is a quick, filling, and nutritious breakfast. I like to make enough to have leftovers for a few days.

INGREDIENTS

  • 1 red or green pear, chopped into chunks (peeled if desired)
  • handful raisins
  • 1-1/2 cup quick cooking oatmeal
  • 1/4 tsp cinnamon
  • 2 tbsp brown sugar
  • pecan halves (or chopped) and milk – for topping

INSTRUCTIONS

  1. place the chopped pear pieces and raisins in a small pot and top with about 2 cups of water – cook on medium high about 3 minutes
  2. turn down heat to medium low and add oatmeal – stir often!
  3. add cinnamon and brown sugar and stir until oatmeal is cooked (usually just a few minutes)
  4. place oatmeal in bowls and top with pecan halves and some milk

French Onion Soup

This is an easy French onion soup recipe I made up today. It is pretty tasty, especially with some French bread and shaved roast beef.

INGREDIENTS

  • 3 medium red onions, thinly sliced
  • 6 cups beef broth
  • 1 clove garlic
  • 2/3 cup Sherry
  • salt & pepper to taste (optional)

INSTRUCTIONS

  1. sautee the onions in a stock pot with PAM on medium heat for about 30 minutes until caramelized
  2. add 1 clove crushed garlic and cook until it turns golden
  3. add the beef stock and cover the stock pot and let simmer on med low for about 2 hours
  4. add the sherry about 30 min before the soup is done

Serve with toasted, sliced French bread covered in mozzarella and shredded roast beef

Peanut Butter and Banana Smoothie

This is a little different twist on a smoothie which is actually pretty good….give it a try!

INGREDIENTS

  • 1 med/lg banana
  • 1 cup milk
  • 1 tbsp peanut butter
  • 3 tbsp vanilla or plain yogurt
  • 1 tsp honey (optional)

INSTRUCTIONS

  1. place all items in a large cup or blender and combine

Egg Salad Wraps

This is a good breakfast meal; the egg salad can be made the night before and kept in the fridge.  These ingredients are estimates according to personal preference and can easily be changed. Makes 2 wraps.

INGREDIENTS

  • 4 eggs, boiled, peeled, chopped
  • fat dill pickle, chopped
  • sausage link, de-cased and chopped (optional)
  • 2 tbsp mayo
  • pepper to taste

INSTRUCTIONS

  1. mix the chopped eggs, pickle, sausage with mayo and pepper
  2. spread on a whole wheat tortilla wrap (room temperature so will fold easier)

NOTE:   You could add a large leaf of romain in the wrap before adding the egg salad for some extra crunch.

Easy Ham and Alfredo Pasta

This is a quick meal idea that is great when you’re rushed for time….and it has 5 ingredients!

INGREDIENTS

  • 1/2 cup ham, cubed
  • 1/2 cup mushrooms, sliced
  • 1/2 cup green peppers
  • canned Alfredo Sauce (I use Bertolli)
  • penne noodles, cooked as directed on package

INSTRUCTIONS

  1. cook the needed amount of noodles as directed
  2. sautee the ham, mushrooms, and green peppers until soft in a skillet
  3. pour the alfredo sauce into the skillet and let everything heat through
  4. drain the noodles when done and combine with the sauce mixture
  5. serve and enjoy!

This recipe is for 2-3 portions.

Substitutions/Additions:

  • add some chopped tomatoes into the heated skillet if desired
  • substitute cooked broccoli or peas for the green pepper
  • substitute mini shrimps for the ham

Rice with Leeks and Chicken

I made this recipe up one night when I wanted a rice dish but didn’t have any onions, so instead I used some leeks which I had in the fridge. It turned out really yummy and didn’t take too long to fix, which is always great.

INGREDIENTS

  • 2 medium leeks, cleaned and chopped
  • 1 cup rice (white or brown)
  • 2 cups chicken stock (to cook the rice in)
  • 2-3 skinless chicken breasts (baked, steamed, grilled, or fried in PAM)
  • pepper to taste

INSTRUCTIONS

  1. sautee leeks in oil until softens (don’t brown)
  2. steam or cook the rice in the chicken or vegetable stock
  3. once the rice is done, add to the pan w/ leeks and season with pepper
  4. serve with baked/seasoned chicken (could be cut up into chunks or left whole)

This is a really easy recipe that we really enjoyed. The amounts presented in the recipe fed 2 people and resulted in some leftovers.

March Challenge – Recipes with 5 Ingredients or Less

This month, I’m going to try to create or review recipes with 5 or less ingredients. The recipes may be for any meal of the day. I think this will be quite a challenge as I am a person that likes lots of spices to flavor my food, but maybe I’ll learn some neat tricks during the month that will make my cooking better.
