Orange Cream Smoothie

Have you ever had those Orange Julius drinks or the orange cream popcicles (I remember from childhood)? I made this smoothie the other day and it reminded me of those — I really enjoyed it! I added vanilla whey protein since I wanted to have this as a quick breakfast meal before work. (you could add vanilla yogurt instead if you wanted)

  • 1 scoop vanilla whey protein
  • 3/4 cup oj
  • 3/4 cup milk
  • 1 banana

  1. place all ingredients in blender or large plastic cup (like a Big Gulp cup) using a wand blender and combine until it’s smooth. Yum!

Homemade Yogurt Cheese

I stumbled upon yogurt cheese when making tzatziki the other day…don’t know why it never dawned on me before to taste the drained yogurt …. it was almost like cream cheese! I’ve made Quark in the past, aka buttermilk cheese, but it has a very sour taste.

I used a large container of 2% plain yogurt (NOT STIRRED) and placed it in a cheese cloth and let it drain in a strainer for about 8 hours (or overnight). It will be fine to let it drain in your sink as long as your kitchen isn’t too hot. …. You could also use a yogurt maker (which I have and haven’t used yet!)

I loved the creamy consistency that resulted from this process and will make it a regular substitute for cream cheese. I plan to add my own herbs, etc next time to make what I know will be some awesome creamy cheese spread.

Grilled Ham and Cheese Sandwich

Grilled cheese sandwiches are such an easy treat, and they can made so many ways!

We usually have cheddar with tomato slices on our sandwich but tonight I wanted something a little more substantial, so I added mustard, ham, onions, mozza and cheddar and….. it was lovely!

  • shredded ham (honey baked is good)
  • cheese – cheddar and/or mozzarella
  • dijon or other spicy mustard
  • tomato and/or onion slices
  • bread slices, buttered on one side

  1. place your bottom slice of bread in skillet which has been preheated on medium low heat
  2. spread mustard on the slice and top with ham, cheese slices, tomatoes/onions slices and cover with top slice of bread
  3. once the first slice of bread is grilled and the cheese melts a bit, flip the sandwich and grill until the other side is done

Alternately, you could place the assembled sandwich on a mini grill with a lid and cook both sides simultaneously…you wouldn’t have to worry about flipping it then and it would cook up more evenly!
